Practically Fried Okra

I was inspired by Kath's Better-Than-Fried Okra, as I am with a lot of her healthy recipes. I saw okra in the store, and now being a resident of the south, I thought it would be fit if I tried it. It was similar to my bok choy experiment. Okra is a food I may have tried once? I've definitely never cooked it before though. Everyone in the south seems to be big fans, so I figured it was best to give it a shot!

Okra is not very photogenic. But we chopped away. We were going to go with Kath's recipe, but then realized our corn meal went bad...in 2009. So we had to work with what we had...and because it was nearing 7pm and I was hungry! We scrambled an egg with some milk and dipped the okra in it. Then dipped them in bread crumbs.

It was a msesy job, but somebody had to do it.


I drizzled on some olive oil and sea salt and popped them in the oven at 350 degrees for about 30 minutes.


The okra was delicious! It was crispy from the oil but a much healthier option than frying them up in a bath of oil right? Just humor me and tell me I made the right decision. I like okra a lot I've decided. It's not quite on the list of all-time favorite veggies, but I would not turn away from it if I saw it on a menu.

For the rest of dinner we had salmon and noodles.

It was quite the feast!

  1. Those looks yummy Emily! I haven't eaten Okra too much, but I have had it fried in restaurants before.. I'll have to create a GF version!
