Overnight Oats for two!

I've convinced the man in my life to try overnight oats. He is usually a little hesitant towards my random healthy foods I bring into the kitchen, like the chia seeds. Some of the recipes he would eat, be nice about, but never ask for them again. And that's ok. I admit, some of them taste fat free. He loves some of them though, like the cookies. But I try to mix in the healthy with the not-so-healthy to balance things out for him. I told him last night I was preparing my oats for the morning and, almost joking, asked if he wanted some too. To my surprise, he said yes!

So today, overnight oats for 2!

I learned my lesson last time with the frozen banana. It's hard to unpeal and cut bananas when they're frozen. So I pealed the banana and chopped it up before sticking it in the freezer overnight. I can be so smart sometimes.

The mix last night:
  • 1 cup oats
  • 1 cup skim milk
  • 2 tsp maca powder
  • 2 tbsp chia seeds
  • dash of vanilla
  • sprinkle of cinnamon
  • 1 tbsp brown sugar
  • 2 tbsp strawberry jam
I debated adding the jam in the morning, but I thought it might make the overnight oats a little sweeter so I just threw it in. Why not right?

This morning I whipped up the banana with a few frozen strawberries. It was overnight oats heaven! 


His big bowl, with a scoop of peanut butter, coconut sprinkles and some chocolate chips so he hopefully liked it more ;) I bribe him. It's totally fine.


Best part of finishing the strawberry jam jar....using it as a bowl so I can get every last lick of delicious jam out of it. With some s'more iced coffee.


The verdict: he really liked it, but I don't think he'll be eating it too often. But it wasn't a complete fail. I think he liked that breakfast was ready to go early in the morning...and that I made it since I was making mine too. He likes sitting down and watching Sports Center while I fix his food. The hard life he has ;)

Oh well, back to my busy day! I'm not sure what's for dinner tonight. Any ideas??
