Heat of the Moment

I feel like someday I'll just make a rash decision and become a vegetarian. It'll definitely be a heat of the moment decision because if I think about it too long, I could never rationalize giving up my beloved hamburger. But a lot of days we actually go without eating today.

I had cereal for breakfast, Vega Shake and Go Choc-a-lot with milk smoothie. I tried it with water when I first got it. Not a good idea. It tastes so much better with milk! And I planned ahead a dinner inspired by Angela! Maybe her vegetarianism is rubbing off on me, or else she just makes the most delicious meals. Either one.

She suggested yesterday that her Cabbage, Potato, Carrot, and Tomato Curry soup would make a good crock pot recipe. I said "Great idea!"

I prepped some veggies last night

1 cabbage head, 3 carrots, 7 new potatoes, 2 squash, 1 onion.

This morning I dumped it all in the crock pot, added 32oz vegetable broth, 1 large can of diced tomatoes, 2 cups of water, 2tbsp curry seasoning, sea salt and pepper. I let it sit all day, about 10 hours!

And for dinner! It was delicious. Just enough spice. I really love cabbage so I enjoyed it a lot. The potatoes made it hearty enough that you don't need a side dish to go with it.

Can you tell how humid it is? My lense was fogging up faster than I could take a picture! I ran inside immediately following this picture because it was too hot to eat hot soup outside.

Before dinner I thought it'd be a good idea to run. Speaking of heat, the weather channel said it felt like 110 degrees outside. I'm dying here people! Take me back North! 1.5 miles in 21 minutes. 21 minutes!! that's over a 14 minute pace. Not so good! I kept cramping and having to walk, I was drenched in sweat. It just wasn't fun at all. I knew if I waited until 7 or 8 though I would never do it. I'm 2 running days down in my 5k training plan! Many days to go.

Later I might have to nibble on some scuffins.

Is anyone else in Florida and hating the thought of stepping outside right now? We can vent to each other. As long as we're in air condition. I don't go outside before 6pm anymore. It's decided. Are you vegetarian? What are some of the pros and cons?
