Asparagus Pizza

Last night we came home to more goodies :) Mixing bowls! With rubber around the outside for better gripping. How perfect is that for me? In other news, I broke the camera. Again. Dropping it. Again. This time the flash thing on top is broken. Anyone know a good camera repair man? Or a place to get a rubbery plastic covering the camera? I think that'd be a great idea. Maybe I'll invent a clutz proof camera someday.

And moving on to dinner. We made a pizza, I think I found the original recipe in a Weight Watcher's magazine or book? But we've changed it a little and added a few things. I don't generally like pizza very much, but I like homemade pizzas.

The ingredients:




  • Whole Wheat Pizza Crust

  • About 10 asparagus spears

  • Pesto (homemade or last night we cheated and got it from the store)

  • Fat Free Feta

  • 1 tomatoe

-Preheat the oven to 425 degrees
-Chop the asparagus, first cutting off the bottom since it doesn't cook well and cut the rest of the spear into about 4 parts
-Thinly slice the tomato

We made enough for 2 pizzas because we bring leftovers for lunches. So lots of asparagus!


-Put the pesto on first, then we pretty much just do a free for all with the other toppings, tossing on the asparagus, tomato, feta and then sprinkle on some Garlic Gold to taste
-Put in the oven for about 12 minutes, depending on your crust. Thinner crusts cook a little faster. Cook until crust is crispy and veggies and cheese soften



The finished product! I think we just love it because it's pretty quick and easy to do. Cooks quickly and easy clean-up.  A perfect dish for 2.

  1. I love the idea of asparagus on pizza!! I think I'll have to try that next time I buy the mix for a GF crust. Gosh my favorite type of pizza definitely has lots of sauce and MUSHROOMS! Golly, I love mushrooms, especially on pizza.

    By the way, can I enter that contest more than once?
