And a Pickled Egg

Good evening everyone! I'm a day behind in blogging but here's what I did yesterday. I've been so busy I can't keep up!

Here was my view for most of the day. You can be jealous. After relaxing all afternoon, somehow we got the idea that doing Insanity would be smart. I almost died.

So on to dinner...we made some great caesar type salad that my family has made for as long as I can remember. I don't even know where we got the recipe

  • 1 large head romaine lettuce
  • 1 egg
  • 1 tbsp minced garlic
  • 1 tsp Worcester sauce
  • 1/3 cup extra virgin olive oil
  • 1 tsp ground dried mustard
  • Parmesan cheese
  • croutons
-Wash and dry the lettuce, then put the egg in a small bowl of boiling water. We sometimes just use a 1 cup measuring cup, fill it with the hot water and let it sit there until we're ready for it
-Next, mix the olive oil, garlic, mustard and worcester sauce at the bottom of a salad bowl.

-Rip up the romaine and toss it in the salad bowl.
-Mix the lettuce and olive oil mixture until well mixed.
-Crack the egg into the salad and mix until VERY well mixed, make sure you mix it well or else it can be kind oozy goozy.
-Add parmesan cheese and croutons to taste. If you like a cheesey salad, you can add a bit more. I usually put on enough so the lettuce is lightly covered

And voila! You have this!

To go with the salad we made Chicken Quesadillas with grilled chicken...

Refried beans, because of a lack of black beans, salsa and cheese

Yumm...we tossed them on the grill for a few minutes and they were great.

Salad, quesadilla and home grown green beans. Because I hadn't had enough food at this point, I had to have a pickled egg.. I loveee pickled eggs! They're so good!

And because why stop there when there is dessert to be had, we hopped in the truck and headed here after dinner...

I worked at Ritchey's Dairy for about 3 years in high school. It is a must have whenever I visit home. And I'd eat it every day I was home if I wasn't trying to watch my weight ;)

I got chocolate butter fudge, with sprinkles. Naturally. Sprinkles make ice cream so much better!

And my friends ice cream choices...butter pecan and chocolate butter fudge with oreos. Good choices ;)

We ended the night here, with some marshmallows. Actually, I didn't have any marshmallows, I just had a good time relaxing by the fire on a nice summer night!

Today was wedding planning out the wazoo, but more on that later!

  1. I'm glad you are enjoying your time at home Emily!! Ritchey's dairy is so great and much cheaper than the Meadows--but ohhh I love the Meadows too! Can't wait to hear more about wedding planning!
