Overnight Oats round 3

No one can say I didn't try! Let's try this oatmeal thing again shall we?

I saw Angela's recipe for PB&Jam overnight oats and felt inspired. So inspired that despite being a debbie downer last night, I managed to scrape up some energy to prepare my breakfast. So I got to work with her recipe, made it non-vegan and made some changes with what I had, still trying to eat what's lying around our house before going shopping. We've almost gone a week now!

PB&J Non-Vegan Overnight Oats
  • 1/2 cup oats
  • 1 cup skim milk
  • 1 tbsp peanut butter
  • 1 scoop strawberry whey protein powder
  • 1 banana
  • 1/2 cup frozen strawberries
  • 1 tbsp strawberry jam
 We don't have a food processor, but we did register for one. For the time being, we make due with the blender.

In the blender I mixed the milk, peanut butter, protein powder, strawberries and banana and blended til frothy. I then poured that mixture into the bowl and mixed it in with the oats. I also threw in some goji berries. Pretty much it looked like a pink sloppy mess.















Then I put it in the fridge. Tick Tock Tick Tock...6am, where are you? I'm anxious to try my oatmeal!
















And this morning it looks more like a brown sloppy mess! Too much milk I think. I mixed in a little stevia to sweeten it up. You might not need that, it's just me and my oatmeal distaste. I put some homemade strawberry jam on it, an extra little spoon full of peanut butter and some walnuts because I need crunch in my oatmeal. Granola or anything you have lying around would work if you like the crunch too. I'm working on a limited pantry today. For times sake I had to pack it up to go. I took a few bites and it's so far so good! Hopefully I'll manage to eat most of it this morning at work and have a successful oatmeal experience. That will have to wait until later though because I have to get to work early today!
