Green Monster in a NEW BLENDER

Oh boy oh boy oh boy! Mr. UPS man loves this house! Today was probably the best delivery ever!

In some preface to the following post, so we don't seem like spoiled brats, we are getting married in just over 3 months from now. I also have a bridal shower in less than 2 weeks. Most of our family and friends live in Pennsylvania and know we are living in Florida, so they're mailing gifts here. I admit it, I don't hate it right now. I am getting a little spoiled by the flooding of love from family and friends up North.

Today, my dad's coworker and his wife sent us a beautiful slow cooker!!! ahhhh!!! I am coming up with recipes in my head as we speak! Who wants to come over for dinner? I'll cook :) AND (spoiled, I told you) a new blender! This thing rocks the socks off of fiance's $10 3 year old blender.























Ain't she a beaut?  I must blend. A Green Monster it is! So after a quick 2 mile run, I came up with this...

















Welcome to the week of using up random things lying around in the kitchen. I decided to make a version of Jessica's Vanilla Bean Smoothie 
  • 1 mango
  • 1 cup skim milk
  • 1/2 tsp vanilla extract
  • 1 cup activia light vanilla yogurt
  • 1 scoop vanilla whey protein
  • 2 cups kale
  • 1 tsp maca powder
  • 1/2 cup frozen strawberries
I had some kale lying around and I thought that would really test the new blender















and rather than ice, I added some frozen strawberries to add a little more berry flavor.

Kale green monsters are NOT for beginners. It leaves a bit of chewiness in the smoothie. A Vita-mix would probably destroy the kale so if you have one, you could probably throw any green in you'd like with no problems at all! Overall, a successful smoothie and a great time using the brand new blender!















For dinner I decided to roast up some veggies that were going to go bad. So we had a random veggie mix of yellow wax beans, green beans, broccoli and squash















With a drizzle of EVOO, sea salt, lemon pepper seasoning and a spritz of lemon juice. I just really love the citrus in my veggies lately!

If presentation is everything, I've clearly failed. After mixing it all up I added another spritz of lemon juice to add some extra zest and it was perfect!

And for an encore, I think I shall have more banana bread.
